Blueberry Muffins

Ingredients:

2 cups all-purpose flour

2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1/2 cup milk

2 tsp vanilla extract

2 cups fresh blueberries

1 tbsp all-purpose flour

 

Instructions:

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or spray with cooking spray.

In a medium-sized bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, until well combined.

Mix in the milk and vanilla extract until everything is well combined.

Gradually add the flour mixture to the wet ingredients and mix until just combined. Do not overmix.

In a small bowl, toss the blueberries with 1 tablespoon of flour. This will help prevent the blueberries from sinking to the bottom of the muffins.

Fold the blueberries into the muffin batter until evenly distributed.

Divide the batter evenly between the 12 muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Remove the muffins from the oven and let them cool in the pan for 5 minutes.

Transfer the muffins to a wire rack and let them cool completely before serving.

Tips:

If you don't have fresh blueberries, you can use frozen blueberries instead. Just make sure to thaw them first and drain any excess liquid.

You can add a streusel topping to the muffins for extra texture and flavor. To make the streusel, mix together 1/4 cup of flour, 1/4 cup of brown sugar, and 2 tablespoons of melted butter. Sprinkle the streusel over the muffins before baking.

For a healthier version, you can use whole wheat flour and replace some of the butter with applesauce.

These muffins freeze well. To freeze, wrap each muffin individually in plastic wrap and store in an airtight container in the freezer for up to 3 months
