ROYAL QORMA– Rich & Flavorful Dish

Shahi Qorma, also known as Royal Korma, is a rich and flavorful Mughlai dish that is a favorite in South Asian cuisine. The dish is made with tender meat that is simmered in a creamy sauce, which is flavored with aromatic spices and herbs. It is typically served with naan, rice, or paratha.

Ingredients:

1 kg boneless mutton or chicken, cut into small pieces

1 cup yogurt

1/2 cup cream

2 onions, finely chopped

2 tablespoons ginger-garlic paste

2 teaspoons cumin seeds

1 teaspoon black peppercorns

4-5 green cardamom pods

2-3 black cardamom pods

2-3 cinnamon sticks

2 bay leaves

1 teaspoon red chili powder

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

Salt to taste

Oil for frying

Chopped coriander leaves for garnishing

 

Instructions:

 

In a large mixing bowl, combine the yogurt, cream, ginger-garlic paste, red chili powder, coriander powder, turmeric powder, and salt. Mix well to make a marinade.

Add the mutton or chicken to the marinade and mix well. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 2 hours, or overnight for best results.

In a large saucepan, heat some oil over medium-high heat. Add the cumin seeds, black peppercorns, green cardamom pods, black cardamom pods, cinnamon sticks, and bay leaves. Fry the spices for a few seconds until they become fragrant.

Add the finely chopped onions to the pan and sauté them until they turn golden brown.

Add the marinated meat to the pan and stir well to coat the meat with the onion and spice mixture. Cover the pan and let the meat cook on low heat for 30-40 minutes, stirring occasionally.

Once the meat is cooked and tender, remove the lid and let the sauce thicken to a desired consistency. If the sauce is too thin, cook it on medium-high heat for a few more minutes.

Garnish the Shahi Qorma with chopped coriander leaves and serve hot with naan, rice, or paratha.

 

Tips:

For a richer flavor, you can add almonds or cashews to the marinade and blend them with the yogurt and cream before marinating the meat.

If you don't have ginger-garlic paste, you can use freshly grated ginger and minced garlic instead.

You can use lamb or beef instead of mutton or chicken, but adjust the cooking time accordingly.
